Fish and Co boldly asserts itself as a “sustainable seafood café”. UK-born chef and owner Tom Kime is passionate about sustainable seafood and has travelled the world researching the topic and visiting Marine Stewardship Council (MSC) certified fisheries for his Fish Tales cookbook.
At Fish & Co. all the seafood is sourced from wild caught fisheries, the majority of which comes from fisheries assessed and certified by international group the Marine Stewardship Council. About this consumers should make up their own mind.. would you rather an imported but certified product or local, un-certified seafood? Fish & Co offers both, so you can make the choice.
Species that make regular appearances on the Fish & Co. menu include fantastic Yellow-Eye Mullet from the Coorong in South Australia (MSC certified), Alaskan Salmon, Spencer Gulf Prawns, NZ Hoki and Hake from South Africa.
Not familiar with any of these species? A display of species profiles along one wall will educate you about what they are and why they have been designated a sustainable choice. Want to know where your fish is from? A large wallmap has the origin of the species used marked clearly on it. Fish & Co. is also hoping to achieve full MSC chain of custody certification, an impressive move that will ensure full traceability of the species on offer.
We are very impressed with Tom Kime’s passion and dedication to the Sustainable Seafood cause. At Fish & Co. consumers will find all the available information they need to eat seafood with confidence.
